Method
- Slice off the tops of each bell pepper and scoop out the seeds and membranes with a spoon, creating a hollow cavity.
- Use a small paring knife to carefully cut spooky face features—like eyes and a jagged mouth—into the exterior of each hollowed pepper, making sure not to poke through the walls.
- In a mixing bowl, combine shredded cheese, minced garlic, dried herbs, a drizzle of olive oil, and a sprinkle of salt and pepper. Mix until well blended and creamy.
- Fill each carved-out pepper with the cheesy mixture, pressing gently to pack it in tightly.
- Place the filled peppers on a baking sheet lined with parchment paper, standing upright. Drizzle the tops with a little olive oil for extra crispness.
- Bake the peppers in a preheated oven at 400°F (200°C) for about 25-30 minutes, until they are tender and the cheese is bubbling and lightly browned.
- Remove from the oven and let cool slightly. The carved faces should be slightly charred, with melted cheese peeking through the carved features.
Notes
Remember to handle the carved peppers carefully—they can be delicate once baked. Feel free to customize the face designs and fillings for a more personalized spooky effect.
