Lemonade Slushie

This lemonade slushie is a frozen treat made by slowly chilling fresh lemon juice with sugar until a semi-frozen texture forms. As it freezes, it develops icy shards and a bright citrus flavor, offering a crisp, crunchy consistency with tangy brightness that reminds of childhood summer days. No blender is required—just patience and a freezer to achieve its textured, icy finish.

Ingredients

  • 1 cups fresh lemon juice preferably freshly squeezed
  • 0.5 cups granulated sugar adjust to taste if desired
  • 2 cups cold water

Equipment

  • Glass jar with lid
  • Fork or stirring utensil

Method

  1. Combine the lemon juice, sugar, and water in the glass jar, then screw on the lid securely.
  2. Shake the jar vigorously for about 1-2 minutes until the sugar dissolves completely and the mixture is well combined.
  3. Place the jar in the freezer on a flat shelf and let it freeze for about 2 hours, checking occasionally to see if it’s starting to firm up.
  4. After 2 hours, open the jar and use a fork to gently scrape and break apart the partially frozen mixture, creating icy shards with a textured appearance.
  5. Re-cover the jar with the lid and return it to the freezer for another 1-2 hours, repeating the scraping process every 30 minutes to ensure an even icy texture.
  6. Once the mixture is firm but scoopable with a slightly icy, crystalline texture, give it a final stir with a fork to break down any larger chunks.
  7. Scoop the lemonade slushie into glasses and serve immediately for a refreshing, crunchy citrus treat.

Notes

For a fizzy twist, top with a splash of soda water just before serving. To avoid overly large ice crystals, check the texture frequently and scrape thoroughly during each freezing interval.
