  • 24 pieces cherry tomatoes firm and ripe
  • 12 ounces fresh mozzarella balls preferably small bocconcini
  • 24 leaves fresh basil leaves small-sized
  • 1/4 cup balsamic glaze for drizzling
  • optional to taste honey to balance balsamic if too tart

Method
 

  1. Begin by washing the cherry tomatoes and basil leaves thoroughly. Pat them dry gently with a clean towel.
  2. Slice each mozzarella ball in half horizontally to create two smooth, flat discs. If they feel too soft, briefly splash them with ice water to firm them up.
  3. Carefully remove the stems from the basil leaves, keeping the leaves intact. Set aside for assembly.
  4. Thread a cherry tomato onto a toothpick, followed by a basil leaf, then a mozzarella slice, creating a layered stack that resembles an eyeball.
  5. Repeat this process until all the ingredients are used, arranging the bites on a serving platter. Once assembled, drizzle the balsamic glaze over the top in a crisscross pattern for a glossy, spooky effect.
  6. If the balsamic glaze is too tangy, lightly splash some honey over the bites to balance the flavors. Serve immediately for the freshest appearance and flavor.
